I have been sent a voucher for a free pack of Kerrygold butter and challenged to come up with a recipe using the beautiful seasonal produce of the summer. I also received a 50p money off voucher too. Kerrygold is stocked in most major supermarkets so very easy to spend the vouchers.
We have a couple of tomato plants in the garden which are laden with fruit, so I thought I would use some of our home-grown tomatoes with the Kerrygold butter to make bruschetta. I also used homemade bread which I bake in my bread machine two to three times each week.
Ingredients (serves 4 as a starter)
2 cloves of garlic
50g Kerrygold butter
16 cherry tomatoes
4 thick slices of white bread
salt
pepper
mixed herbs
Method
Peel garlic and push through garlic press.
Chop tomatoes
Cut thick slices of bread
Mix together garlic and Kerrygold butter
Spread generously on the bread
Top with chopped tomatoes
Sprinkle on salt, pepper and mixed herbs
Place under a moderate grill for about 5 minutes
Serve and enjoy.
