Chocolate Refrigerator Cake and Kerrygold Make Over

One of my favourite cakes to bake is Chocolate Refrigerator Cake. I base mine on Annabel Karmel’s recipe with a few tweaks. Instead of apricots, raisins and pecans, I use chopped dates, sultanas and toasted coconut pieces. Also I will quite happily use salted or unsalted butter in it.

Here’s a photo of a batch I made using Kerrygold spreadable butter. This was bought using a 50p off voucher which I received earlier in the year when I blogged about Bruschetta. And I’m expecting some more vouchers in the post this week.
