Who’s hungry for Awfully Posh Lomo Crisps?

With everything going on this year, some businesses are really struggling in these tough times. So with the future still very precarious in the hospitality industry, The British Snack Co. has had to change their focus from the pub to online sales. They produce three brands of snacks which you may have come across previously:- Awfully Posh, The British Crisp Co. and The British Popcorn Co.

I particularly enjoy snacking on something savoury, so I was pleased to receive a box of 5 packs of Awfully Posh Lomo Crisps free to review from The British Snack Co.

Awfully Posh Lomo Crisps

If you haven’t heard of Lomo, it is cured Spanish Pork Loin, which is one of my favourite cuts of pork. I’ve previously enjoyed it as Tapas, but haven’t come across it as a crisp before. These Awfully Posh Lomo Crisps have been air dried, not fried and made using 100% Spanish Pork, cured with a blend of paprika and garlic. And I can affirmatively say that yes they taste as delicious as they sound. Very moreish and definitely crisp and crunchy. Much better than your average crisp.

They are high protein and low carb comprising 63g protein, 0.5g carbohydrate, 23g fat and 6g salt per 100g. They are also gluten free. The packet size is 25g. They therefore work well with both the KETO diet and Atkins approach to meal plans. It is always a plus point in my opinion to have high protein products like this which do not need refrigerating.

Lomo is a new addition to the Awfully Posh range which also includes Pork Puffs, Pork Scratchings and Pork Crackling in a selection of flavours. However Lomo Crisps do seem significantly pricer than all the other products in the range, probably due to it using a premium cut of pork, namely the loin.

You may purchase them via their online store in boxes of 10 packets and they are also stocked in places like Fuller’s and Waitrose.

One thing I would like to see changed is the packaging. It has the dispose in litter symbol. Hopefully they are investigating alternative compostable or recyclable packaging.

A trio of healthy red meat meals

Britmums have challenged bloggers to take the #HealthyRedMeat Challenge to create a delicious family meal with beef, pork or lamb. And as one of the first 100 to sign upto the challenge, I received a free £10 Tesco voucher to purchase red meat.

Now son2 is very fussy about what he will eat and son1 doesn’t like beef, so I decided to play it safe and spent the voucher on 2 packs of pork mince and a pack of sausages, as I knew those should go down well. Plenty of good quality #HealthyRedMeat at a very affordable price.

Experts recommend including lean red meat in children’s diet from weaning onwards. Red meat provides a range of important nutrients that are often low in toddlers and children – including iron, zinc, and B vitamins, selenium and potassium.
Red meat has been in the spotlight recently, and experts fear that the nutritional benefits have been overshadowed by misleading negative views. To cut through the confusion, the Meat Advisory Panel, an independent group of health and nutrition experts, is partnering with BritMums to promote red meat in the diets of children.
Dr Emma Derbyshire, a public health nutritionist and mother, says: “Including a small portion of red meat in the diet a few times a week after weaning can help to bridge nutrient gaps and so help to maintain good health through childhood and beyond.”

So the first pack of mince was used to make Breaded Pork Meatballs which I served along with my homemade Cheesy Chips. Or plain chips for son2 who has recently taken a dislike to cheese. Luckily it is simple to remove a portion of chips before adding the cheese.

Breaded Pork Meatballs

Breaded Pork Meatballs

Ingredients (serves 4)

500g pork mince
2 slices of stale bread
1 egg
2 tbsp plain flour
salt and pepper
1 tbsp olive oil

Method

Tear bread into small pieces and put in blender.
Whizz into breadcrumbs.
Beat the egg in a flat dish.
Form the mince into about 16 balls.
Sprinkle the flour on a chopping board.
Roll the meatballs in flour.
Dip the meatballs in the egg.
Tip breadcrumbs into a dish and season with salt and pepper.
Roll the meatballs in breadcrumbs to fully coat them.
Gently heat the oil in a wok on hob.
Cook the meatballs for about 15 minutes, until they are thoroughly cooked, turning at intervals.
Serve with cheesy chips and your choice of vegetables.
Enjoy.

Breaded Pork Meatballs

A really tasty meal. The next day it was mince up again. This time I made Pork Burgers which I served in ciabatta bread along with a repeat of the Cheesy Chips. But rolls would be fine too.

Pork Burgers

Ingredients (serves 4)

500g pork mince
1/2 tbsp plain flour
1 tbsp olive oil

Method

Form the mince into 4 burgers.
Sprinkle the flour on a chopping board.
Coat the burgers in flour.
Gently heat the oil in a frying pan on hob.
Cook the burgers for about 15-20 minutes, until they are thoroughly cooked, turning at intervals.
Serve in your choice of ciabatta bread or bread rolls with cheesy chips and salad or vegetables.
Enjoy.

Pork Burgers

Again another delicious meal. And finally a meal we have frequently in our household as it is one of both boys’ favourites, namely Toad in the Hole. I served this with mini roast potatoes and a wide range of vegetables so that everyone could choose which ones they wanted alongside.

Ingredients (serves 4)

375g pork sausages
150g plain flour
1 egg
450ml milk
pinch of salt
spray oil

Method

Preheat fan oven to 200 deg C.
Put flour and salt in mixing bowl.
Make a well in centre of flour.
Crack egg into well.
Add sufficient milk to beat to a paste.
Gradually whisk in remainder of milk.
Meanwhile spray oil onto baking tray.
Prick sausages and place in baking tray.
Cook sausages for 5 minutes on middle oven shelf.
Pour batter over sausages.
Return to oven and cook for about 30 – 40 minutes.
Serve with roast potatoes, gravy and your choice of vegetables.
Enjoy.

Toad In The Hole

Of course this went down very well. And here is the Cheesy Chips recipe, mentioned earlier.

Cheesy Chips

Ingredients (serves 4)

600g potatoes
50g grated cheddar cheese
1-2 tbsp olive oil

Method

Preheat fan oven to 200 degree C.
Peel the potatoes.
Chop potatoes into thin chips.
Heat the oil in a baking tray in oven for 3 minutes, ensuring the base is fully covered.
Add the chips and turn a few times to ensure coated in the oil.
Cook for about 15 minutes, turning halfway through.
Meanwhile grate the cheese.
Once the chips are cooked, sprinkle the grated cheese over the chips.
Return to oven for about 3 minutes, to allow cheese to melt.
Serve and enjoy.

High Protein Snacks review & giveaway

My other half announced a few months ago that he wanted to eat less carbs. I’m now finding it quite challenging to come up with meal ideas for the whole family as the boys’ favourite meals are pizza and pasta, so carb loaded. And since they tend to turn their nose up at a large piece of meat or fish, I usually stick to cooking what they enjoy. So my poor other half ends up more often than not with a plate of carbs. And if he chooses not to eat it, there is unlikely to be an alternative prepared.

So I was pleased to receive a box of high protein snack packs, free to review from Top Herd Snacks.

I received 1 each of the following varieties.
Tangy Tomato Beef Jerky
Smoky BBQ Beef Jerky
Sweet Pickle Beef Jerky
Honey Mustard Pork Jerky
Zesty Lemon Turkey Jerky
Chilli & Lime Turkey Jerky
Tomato & Paprika Skinny Salami
Chilli Pepper Skinny Salami

Son2 as usual was very skeptical and refused to taste them, but the rest of us tried every variety and gave them a thumbs up all round. I liked all of them, but my favourite is the Honey Mustard Pork Jerky. I did find that the salamis are very chewy, but there is a warning on the packet stating that the snack is only suitable for strong teeth. Meanwhile son1 liked both the salamis best, whilst my other half opted for the same as me – the Honey Mustard Pork Jerky.

These snacks are all high in protein ranging from about 38g – 50g per 100g depending on the variety. They are also gluten free and made from 100% natural ingredients. Another big plus point is that they are long-life products which do not need to be refrigerated.

At present, these snacks are only available to purchase via the Top Herd website, but they plan to be in supermarkets later this year. They are sold in packs of 8, either 8 of the same type or a mixed flavour bundle, currently retailing at £15.92 which equates to £1.99 for each individual 35g packet of jerky or 40g packet of salami. I highly recommend that you give them a try. I’ve already placed my first order and can say that checkout was simple.

Summer recipes with Lee Kum Kee Chinese sauces

I’ve been busy cooking some tasty BBQ treats, chinese style. This is to tie in with the Lee Kum Kee summer BBQ carnival. Unfortunately the weather was not kind to me on the day and the barbecue had to be abandoned in favour of the oven. But I’ve made sure that my recipes have both barbecue and oven instructions.

Lee Kum Kee Chinese Sauces

So I received a selection of four of the Lee Kum Kee sauces free in use in my recipes. They also sent a USB key ring and a copy of their Wok Along Discover Chinese Cooking book. The sauces comprised:-
Oriental Sesame Dressing (new to Lee Kum Kee range)
Chiu Chow Chilli Oil
Char Siu Sauce
Premium Oyster Sauce

Now on to my recipes. First up we have kebabs, both fish ones and vegetable ones. Kebabs are always a firm favourite on the barbecue in our household and the oyster sauce flavour really compliments them well.
Fish and vegetable kebabs

Fish kebabs

Ingredients (makes 4-5)

12 frozen king prawns
1 bag of frozen fish pie mix (cod, smoked cod and salmon)
4-6 tbsp Lee Kum Kee premium oyster sauce

Method

Defrost the prawns and fish pie mix for about 3hrs at room temperature.
Heat BBQ up or preheat fan oven to 180 deg C.
Spoon the oyster sauce into a couple of bowls.
Add the fish pieces to one bowl and the prawns to the other bowl.
Mix to ensure they are nicely covered with the oyster sauce.
Allow to stand for 5 minutes.
Thread the fish pieces and prawns onto skewers in an alternating order.
Any leftover fish pieces, thread onto an additional skewer.
Place on either a foil tray for BBQ or baking sheet for oven.
Cook on BBQ or middle shelf of oven for approx 10 minutes.
Serve and enjoy.

Vegetable kebabs

Ingredients (makes 3)

1 courgette
3 small shallots
6 medium mushrooms
3 small sweet peppers
4-6 tbsp Lee Kum Kee premium oyster sauce

Method

Heat BBQ up or preheat fan oven to 180 deg C.
Chop sweet peppers in half and remove seeds.
Top and tail the courgette and cut into 6 pieces.
Remove skin from shallots and top and tail.
Spoon the oyster sauce into a couple of bowls.
Add two types of vegetables to each bowl.
Mix to ensure they are nicely covered with the oyster sauce.
Allow to stand for 5 minutes.
Thread the vegetables onto skewers in an alternating order.
Place on either a foil tray for BBQ or baking sheet for oven.
Cook on BBQ or middle shelf of oven for approx 15 minutes.
Serve and enjoy.

Next we have pork loin steaks with Char Siu sauce. I haven’t cooked pork steaks previously, but I will definitely be purchasing them again. Tasty, tender and very good value for money, approximately 50p per steak. And a delicious flavour with the Char Siu sauce.

Pork Loin Steaks with Char Siu Sauce

Ingredients

2 Pork Loin Steaks
4 tbsp Lee Kum Kee Char Siu sauce

Method

Spoon the Char Siu sauce into a flat dish.
Trim any excess fat off the pork.
Add the pork steaks to the dish, turning several times to ensure well coated with the sauce.
Allow to stand for 5 minutes.
Either cook directly on BBQ or on a low heat in a preheated wok.
If using wok, spray with oil first.
Drizzle any spare sauce from the dish over the steaks.
Turn the steaks over after about 5 minutes.
If necessary, turn again after a further 5 minutes.
Serve hot with your choice of vegetables and rice.
Enjoy.

As I’d bought a big pack of pork loin steaks, I cooked some more the following day using the same method, but served in a wrap. So easy finger food for summer eating.

Char Siu Pork Wrap

Ingredients (makes 2)

2 wraps
2 pork loin steaks
6-8 leaves of Little Gem lettuce
6 tbsp Lee Kum Kee Char Siu sauce

Method

Cook the pork steaks as above using 4 tbsp of the Char Siu.
Shred the lettuce.
Spread 1 tbsp Char Siu sauce over each wrap.
Heap the shredded lettuce onto each wrap
Chop the pork into pieces and add to wraps.
Fold each wrap closed.
Serve and enjoy.

And of course in the summer, you want a salad alongside your barbecued food. So I made a Tomato and Bread Salad, which you usually think of as an Italian dish, but I gave it a very tasty Chinese twist with the Oriental Sesame Dressing. Very yummy. You will need a very large dish for this. I thought mine was big enough before I started, but ended up having to split it across 2 dishes.

Tomato and Bread Salad

Ingredients

600g mixed tomatoes
200g sweet peppers
200g ciabatta bread, preferably stale
4 tbsp Lee Kee Kum oriental sesame dressing
6 tbsp olive oil
salt
pepper
1 tsp sesame seeds

Method

Cut the ciabatta into pieces and put aside to dry out. If necessary, toast slightly in the oven.
Chop the tomatoes into pieces and put in a large serving bowl.
Chop sweet peppers in half and remove seeds.
Add to bowl.
Season with salt and pepper.
Add the bread and mix together.
Stir in the oriental sesame dressing and olive oil. Add extra of either if necessary.
Sprinkle in sesame seeds.
Serve and enjoy.

I haven’t included a recipe in this post for the Chiu Chow Chilli Oil, but this adds a wow to my pasta salad.

Most of these products can be purchased in major supermarkets.
