Creamed Spinach

I decided not to buy any sprouts for Christmas dinner this year. I’m the only one in the household who eats them anyhow and I’d already had some at the works canteen Christmas lunch. But as I headed to bed on Christmas Eve, thinking about the cooking preparations I had already done, I just fancied the idea of something else green on the plate. Too late to purchase a few sprouts now, I decided to resort to spinach from the freezer. I was planning to see if I could make my own version of the creamed spinach side dishes that I have previously enjoyed at Italian restaurants. Hopefully it was not too ambitious to try to make something new on Christmas Day, when I already have a packed schedule of running, then cooking planned for the big day.

So this is what I came up with. I only made a small quantity as I was cooking lots of other side dishes too.


Creamed Spinach

Creamed Spinach

Ingredients

200g frozen spinach
15g butter
15g wholewheat plain flour
100ml crème fraîche
30g cheddar
salt and pepper

Method

Defrost the spinach in a sieve above a bowl, at room temperature, a couple of hours earlier.
Once defrosted, use a fork to squeeze the liquid out of the spinach, reserving this for later use.
Grate the cheese.
Melt the butter in a saucepan.
Stir in the flour to form a paste.
Stir in the liquid squeezed from the spinach.
Season with salt and pepper.
Stir in the spinach and crème fraîche.
Stir in the grated cheese.
Serve hot as a side dish.

It tasted delicious, and son1 thought so too. What a result as he certainly wouldn’t have touched a sprout, but he had seconds of this.

Lamb and Spinach Curry

Chemotherapy altered son1’s tastebuds, so unlike most of his peers, one of his favourite meals is a curry. He enjoys Chicken Tikka Masala and Chicken Korma. I thought I’d try to see what other curries he might like, bearing in mind that he is not keen on potatoes or quite a few other vegetables. So since he enjoys spinach in a cheese and spinach cannelloni, I decided to try cooking a Lamb and Spinach Curry. Meanwhile making another dish for son2 who doesn’t like curry.
Lamb and Spinach Curry

Ingredients (serves 3)

150g diced leg of lamb
200g frozen spinach
1 285g jar of Korma sauce
1 medium onion

Method

Chop the onion.
Add the lamb to the wok and cook over a gentle heat, (no oil needed).
After a few minutes, add the onion and continue to cook.
Once the meat is cooked, remove from wok.
Add spinach to wok and cook until defrosted (no need to pre-defrost).
Return meat to wok.
Add the Korma sauce.
Cook for about 5 minutes.
Serve with rice and enjoy.

lamb and spinach curryVerdict. Son1 wasn’t convinced about lamb. However I thought the meal was delicious. Maybe someday I’ll try making a curry sauce from scratch, but for now I’ll stick to the convenience of a jar.

Chicken, Spinach and Sweetcorn Lasagne

Time to share my first recipe of 2015. Lasagne is a firm favourite family meal in our household. Here is one variant that I make.

Ingredients (serves 2 adults and 2 children)

6 sheets of lasagne
200g frozen spinach
100g cooked chicken
75g frozen sweetcorn
50g plain flour
50g margarine
600ml milk
100g grated cheddar
salt and pepper to season

Method

Preheat fan oven to 180 degrees.
Defrost the spinach in microwave.
Chop chicken into small pieces.
Grate the cheese
Melt margarine in jug in microwave.
Mix in flour.
Mix in about a quarter of the milk and heat for 1 minute on medium in microwave.
Continue to mix in milk, about a quarter at a time and heat for 1 minute each time.
Continue to heat for 1 minute intervals until sauce has thickened, stirring between heating.
Season with salt and pepper.
Stir in most of the grated cheese, reserving a small amount.
Stir in the sweetcorn, chicken and spinach.
Put about a third of the sauce in the bottom of an oven proof dish.
Cover with half the lasagne sheets.
Then cover with another third of the sauce.
Then cover with remaining lasagne sheets.
And then top with remaining sauce.
Sprinkle on the reserved grated cheese.
Cook for about 40 minutes in preheated oven until lasagne is soft, turning dish round halfway through cooking.
Serve and enjoy.

Cheese omelette with truffle oil and spinach

Will try this as I love omelettes and I love spinach recipes, but never tried spinach in an omelette

DINNER BANK

Cheese omelette with truffle oil and spinach

2 eggs
100ml chopped fresh spinach
20g chopped cheese, preferably strong
salt and pepper
1 teaspoon truffle oil
Oil for frying
Fry the spinach in a little oil in the pan quickly. Whisk together eggs, spices and stir into cheese and the fried spinach. Turn a little more oil to the pan and gently tap down omelette batter. Let it get nice color and then flip. Let fry until nicely browned on the other side. Place on a plate and sprinkle with truffle oil. Serve with fresh tomatoes and some salami.
